Lost in the Heights: A Tumultuous Debut and a Fiery Comeback for Tim Raue's Restaurant

By: Stefanie Hofeditz

Stepping into the swanky, towering abode of renowned chef Tim Raue's latest culinary creation, SPHERE, wasn't exactly a walk in the park. During its grand opening, visitors faced a whirlwind of chaos: grumpy waitstaff, incessant queues, and—you guessed it—broken cash registers. But was this just a rookie error or a sneak peek into the treacherous world of high-altitude dining?

According to the "Tagesspiegel," it was the latter. A disgruntled diner shared their perspective, likening the experience to a scene straight out of "Kitchen Nightmares." But fear not, fans of Raue's acclaimed fusion cuisine, for the team immediately sprang into damage control mode. They vowed to make it right, offering those affected a full refund and a voucher for a meal from Tim Raue's "My Home Menu."

What happened on that fateful evening, and how did the team navigate the tides of turbulence? Well, the cause of the chaos was a technical glitch—the brand-new cash registers, meant to streamline kitchen-service communication, decided to throw a temper tantrum, stranding orders in limbo. As if managing a restaurant 207 meters above ground level wasn't a logistical nightmare enough, such a technical mishap certainly didn't help matters.

But the team, understandably rattled, didn't crumble under the pressure. They humbly apologized, learned from their mistakes, and prepared for another go.

Redemption in the Sky

The second evening, bathed in an air of tentative anticipation, welcomed around 150 lucky guests. This time, the night was destined for success—waiters moved smoothly from table to table, dishes arrived with the precision of a well-oiled machine, and the atmosphere was almost blissfully serene.

The celebration commenced as Tim Raue and tower manager Anja Nitsch cut the red ribbon, signaling the start of an evening filled with unforgettable memories. Among the esteemed attendees were former mayor Klaus Wowereit, boxing legend Axel Schulz, style icons Britt Kanja and Günther Krabbenhöft, and numerous journalists from the prestigious "New York Times" to the glamorous "Le Figaro."

A Feast Among the Clouds

Guests were treated to a delectable five-course dining extravaganza, each dish more scrumptious than the last. The evening began with Raue's shrimp cocktail "KaDeWe"—a nostalgic nod to his childhood memories. This was followed by a dainty pike-perch dish, featuring pickled cucumbers, tarragon purée, and duck fat. Raue himself made the rounds, charmingly explaining the intricacies of each dish to eager listeners.

The solyanka, a dish that approved East Berliners, burst with tangy flavor, while the Königsberger meatballs, served with beetroot and mashed potatoes, may have been a bit too salty, but the pièce de résistance—a cheesecake mousse with rhubarb, strawberries, and a salty butter crumble—more than made up for any shortcomings, showing off the culinary wizardry that Raue has become known for.

The tower, a symbol of both old and new, East and West, represented many contrasts. And as Raue himself pointed out during his speech, it was a challenge to live up to the lofty expectations that accompanies such a monumental project: "When the request came in, my first thought was: This will be difficult, if a West German comes to the monument of the East Germans and thinks they need to show off their knowledge." But with the assistance of his trusted confidant, kitchen director Steve Karlsch, Raue felt confident in his team's abilities to create an unforgettable culinary experience for all.

A Bright Future Awaits

The team at the TV tower now faces the uphill task of fine-tuning the food, the processes, and the service to bring SPHERE to its full potential. They aim to offer a dining experience that will leave both Berliners and tourists breathless—a testament to Tim Raue's indomitable spirit and culinary prowess. Here's to hoping for smooth sailing and many more flavorful escapades in the heights.
